This Jewish festival remains practically imperfect without this Latke recipe.

Latkes are like crisp potato pancakes that are served in nearly every Jewish family during Hanukkah.

Latke Recipe Preparation Time

Latkes are one of the simplest dishes that can be prepared without any hassle. The preparation time for some delicious latkes is about a half-hour.

Latke Recipe Ingredients

For six servings of Latkes, you will need:

  • Potatoes (peeled and grated) – 2 Cups
  • Grated Onions – 1 Tablespoon
  • Beaten Eggs – 3
  • Matzo Bread – 2/3 Slices
  • Potato Starch – ½ Cup
  • Cooking Oil – ¼ Cup (½ Cup if chicken schmaltz is not used)
  • Chicken Schmaltz – ¼ Cup (optional, see above)
  • Salt and Pepper to taste

Latke Recipe Directions

  1. Squeeze the grated potatoes and onions dry by using tea and cheese clothes
  2. In a bowl, mix the squeezed mixture along with eggs, crushed matzo breads, and potato starch topped with salt and pepper
  3. Mixed them well until they become dough-like
  4. Make the latke patties from the dough (The thickness depends on individual taste.)
  5. Make sure that even though they are thin, they won’t break apart as soon as they land in the frying pan
  6. In a pan, heat oil and Chicken schmaltz to a maximum
  7. Upon emission of light smoke, lower the heat and put the latke patties in the oil slowly to prevent oil splatter
  8. Turn the patty over when it is golden brown
  9. Fry until the color deepens to a few shades darker
  10. Serve them hot with a dip of sour cream or sweet applesauce

Other versions of latkes include pureed potatoes or other veggies like squash, carrots, etc. instated of potatoes.
